Ingredients
Scale
1/2 cup sugar
1/4 cup brown sugar
1/4 cup unsalted butter
1/2 cup creamy peanut butter
3 large egg whites
1 1/4 cups all-purpose flour
5 oz semi-sweet chocolate chips
6 tbsp heavy whipping cream
3/4 cup crushed candy bars (like Butterfingers)
Instructions
Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
In a mixing bowl, cream together the unsalted butter, sugar, brown sugar, and creamy peanut butter until fluffy. Mix in the egg whites one by one.
In another bowl, whisk together all-purpose flour and salt. Gradually combine this dry mixture with the wet ingredients.
Fill each cupcake liner two-thirds full with batter and bake for about 20 minutes or until a toothpick comes out clean.
For the ganache, heat heavy whipping cream until it simmers, then pour over semi-sweet chocolate chips; stir until smooth.
Once cupcakes are cooled, frost them generously with peanut butter frosting and drizzle ganache on top.
