  • 1 head cauliflower
  • 1 medium sweet potato
  • 2 tbsp avocado oil
  • 1 medium onion
  • 810 cloves garlic
  • 4 cups vegetable broth
  • 1 (15 oz) can cannellini beans
  • Fresh parsley and lemon juice for garnish
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp thyme
  • Kosher salt to taste
  • White pepper to taste
  • 6 leaves of sage, finely chopped
  • 1 bay leaf
  • 6 leaves of lacinato kale, stems removed and finely chopped
  • Juice and zest of 1 lemon
  • 1 garlic clove, grated

Instructions

  1. Preheat the oven to 425°F. Toss cauliflower florets with smoked paprika, coriander, thyme, salt, pepper, and avocado oil on a parchment-lined baking tray. Roast for about 30 minutes until charred.
  2. In a Dutch oven, heat remaining avocado oil over medium heat. Sauté diced onions with salt until softened.
  3. Add crushed garlic and chopped sage; sauté until fragrant.
  4. Stir in cubed sweet potato, cannellini beans, vegetable broth, and bay leaf. Bring to a boil then simmer for 20 minutes until sweet potatoes are tender.
  5. Blend part of the soup for creaminess before stirring in wilted kale.
  6. Finish with lemon juice and garnish with gremolata before serving.
