  • 1 lb ground beef (80% lean)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1.25 oz chili seasoning mix
  • 8 oz tomato sauce
  • 14.5 oz diced tomatoes (undrained)
  • ½ cup chicken broth
  • 2 cups macaroni (uncooked)
  • 2 tablespoons butter
  • 1 cup milk
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. In a skillet over medium heat, brown the ground beef. Add onion, bell pepper, and garlic; sauté until softened.
  2. Stir in chili seasoning mix, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Simmer for 15 minutes.
  3. Cook macaroni in boiling water according to package instructions until al dente; drain.
  4. In another pan, melt butter and whisk in flour to make a roux. Gradually add cream and milk until smooth.
  5. Mix in mustard powder, onion powder, salt/pepper, hot sauce, and shredded cheese until melted.
  6. Combine cooked macaroni with chili mixture and cheese sauce; stir well.
