  • 1/2 cup (120ml) water
  • 1/4 cup (57g) unsalted butter
  • 1/2 teaspoon granulated sugar
  • 1/4 teaspoon salt
  • 2/3 cup (83g) all-purpose flour
  • 2 tablespoons (10g) cocoa powder
  • 1/2 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup (240ml) heavy whipping cream
  • 1/4 cup (25g) cocoa powder
  • 1/4 cup (30g) powdered sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, sugar, and salt; bring to a boil.
  3. Remove from heat and stir in flour and cocoa powder until well mixed. Return to low heat until a smooth ball forms.
  4. Let cool slightly before incorporating eggs one at a time.
  5. Pipe small mounds onto the baking sheet and bake for 18–20 minutes until puffed and firm. Cool on a wire rack.
  6. Whip heavy cream until soft peaks form; gradually add cocoa powder, sugars, and vanilla until stiff peaks form.
  7. Fill cooled puffs with chocolate mousse.
