  • 200 g powdered sugar
  • 2 tsp ground cinnamon
  • 1 pinch salt
  • 2 large egg whites
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 large egg white
  • 120 g powdered sugar
  • ½ tsp lemon juice

Instructions

  1. In a large bowl, combine ground almonds, powdered sugar, cinnamon, and salt.
  2. Whisk egg whites until stiff peaks form, then fold in vanilla extract and lemon juice.
  3. Gently mix the egg whites into the dry ingredients to create a sticky dough.
  4. Wrap the dough in plastic wrap and chill for at least 1 hour.
  5. Preheat oven to 160°C (320°F) and prepare baking sheets with parchment paper.
  6. Roll out chilled dough between parchment sheets to about 1 cm thick; cut into star shapes.
  7. Bake cookies for 10–12 minutes until just set.
  8. For the glaze, whisk one egg white with powdered sugar and lemon juice; brush onto baked cookies.
