Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 24 oz cream cheese
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour (optional, for stability)
  • 3 medium apples (Honeycrisp or Granny Smith), peeled, cored, and sliced
  • 2 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1/2 tsp ground cinnamon
  • Pinch of salt
  • 1/2 cup caramel sauce (store-bought or homemade), plus more for drizzling

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into a springform pan and bake for 8–10 minutes. Allow to cool.
  2. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then add sour cream, vanilla extract, and flour (if using). Blend in eggs one at a time on low speed.
  3. Pour the filling into the cooled crust and bake for 55–65 minutes until slightly jiggly in the center. Cool gradually in the oven for an hour before chilling overnight.
  4. For the topping, melt butter in a skillet over medium heat. Add sliced apples, brown sugar, cinnamon, and salt; cook until tender and caramelized. Stir in caramel sauce.
  5. Once chilled, top cheesecake with the caramel apple mixture and drizzle with additional caramel sauce before serving.
