  • 2 tsp ground cinnamon
  • 1/4 tsp ground cloves

  • 1 tsp instant espresso powder
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1 large egg
  • 1/3 cup molasses
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, cloves, nutmeg, and espresso powder.
  3. In a large bowl, cream softened butter and brown sugar until fluffy.
  4. Beat in the egg, followed by molasses and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined; do not overmix.
  6. Scoop dough into balls (about 1.5 tablespoons each) and roll in coarse sugar if desired.
  7. Place cookie balls on prepared sheets, spaced about two inches apart.
  8. Bake for 9–11 minutes until edges are set but centers remain soft.
  9. Cool on the pan for five minutes before transferring to a wire rack to cool completely.
